at the end, they should have attached the chains to the back of the jeep, swung the back around and taken care of the rear axel/bumper as well.

The cool thing about Cherokees is you can fix all that with one trip to the local Jeep wrecking yard, a couple hundred bucks and a Saturday afternoon.
Maybe he'll install some tow hooks why he's at it this time.

they apparently didn't have enough length in the tow straps to pull the jeep directly out from the front or back instead of trying to pull it sideways.

A better way to free it would have been to dig a hole next on the low side and put a high-lift jack under it. Jack the Jeep up as high as you can and then pull.
The Jeep will fall forward and free.
Of course that would taken a little thought and effort.
That's a really strong tow strap they have though.
